My Scrapbooking

Scrapbooking is a way of life for me now.It has been for over 4 years. I love journaling, taking photos of my family and love colour and texture, these are all part of my everyday life and scrapbooking.

Chocolate Muffins anyone?

The weather here has been dull, dreary and damp, a perfect day for lounging in front of the TV and baking comforting goodies to eat!

Izzy is becoming a bit of an expert in the kitchen, and today made some chocolate muffins with white chocolate chunks. Of course I had to test one *wink wink*




What you will need :

2 eggs
200g caster sugar
130g plain flour
50g  cocoa
2 tsp baking powder
pinch of salt
1 tsp vanilla essence
160 ml milk
160 g melted unsalted butter
150g white chocolate chunks



Method :

Pre heat the oven to 170c
Mix the eggs and sugar together until light and creamy. Add the sifted flour, baking powder, cocoa and salt a little at a time with the milk and vanilla essence.
Mix well.
Now fold in the melted butter and add the chocolate chunks.

Pour mixture into muffin cases, about 2/3rds full. Bake for about 30mins. Leave to cool and enjoy!
