My Scrapbooking

Scrapbooking is a way of life for me now.It has been for over 4 years. I love journaling, taking photos of my family and love colour and texture, these are all part of my everyday life and scrapbooking.

I feel like baking tonight...

Its true, I have been in the mood to bake. Armed with my new baking book that Annie gave me for my birthday, I have been knocking up muffins, like nobodies business. So this weeks blog post will be dedicated to my baking efforts!


A few of you have asked for the Chocolate Orange Muffin recipe , so here it is.




Ingredients:


21/2 cups of plain flour
5 tsp baking powder
1/2 cup of good cocoa ( i am thinking this may be nicer with melted plain chocolate,yet to try though)
1/4 cup of sugar
1 tbsp orange zest
2 eggs
1/2 cup of OJ
3 tbsp butter softened
1 1/4 cups milk



Method:

  • Preheat oven 380f/190c
  • Grease 12 muffin tray
  • Sift flower, baking powder and coca in a bowl. Mix in sugar. make a well in the center of the dry ingredients
  • Lightly beat zest, eggs and juice together. Melt butter. Poor egg mix, butter and milk into dry ingredients and mix quickly to just combine
  • Fill muffin cups with mix, do not over fill!. Bake for 12 - 15mins
  • I did sprinkle some icing sugar, just because it reminds me of snow, which we have had plenty off lately, LOL
  • Enjoy whilst still warm with a large mug of fresh coffee!

Today I baked some chocolate and peanut butter muffins, I will post recipe tomorrow with Template Tuesday!

    thanks for posting the recipe!! Once I saw your post I knew I had to bake today - Yummy fudgy brownies - they rocked! and you are going to post chocolate and Peanut butter muffins - my favorite flavor combo!! YOU rock!!
